Vegan Crock Pot Chili

Vegan Chili

Mix the following ingredients in a crock pot and then cook on MAX for 4 hours:

  • 2 tbsp extra virgin olive oil

  • 3 garlic cloves, minced

  • 1 medium red bell pepper, chopped

  • 2 veggie ground rounds (I used Yves brand)

  • 2 tbsp chili powder

  • 2 tsp ground cumin

  • 1 tsp dried oregano

  • 1/4 tsp cayenne pepper

  • 1/2 tsp pink sea salt

  • 1 (28-ounce) can diced tomatoes

  • 1 1/4 cups vegetable broth

  • 1 (15 oz) can red beans

  • 1 (15 oz) can white beans

  • 2 cups frozen corn
